Zucchini Parmesan Recipe - Cooking Index
1/2 cup | 73g / 2.6oz | Cheese - grated |
8 | Zucchini - sliced, medium | |
2/3 cup | 41g / 1.4oz | Onion - chopped |
2 tablespoons | 30ml | Parsley - chopped |
1 | Garlic - clove, large | |
1 tablespoon | 15ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
1/4 teaspoon | 1.3ml | Oregano |
1/4 teaspoon | 1.3ml | Rosemary |
4 cups | 250g / 8.8oz | Tomato - peeled |
1/4 cup | 59ml | Olive oil |
Heat oil in large skillet. Add zucchini, onion, parsley, garlic, salt, pepper, oregano and rosemary. Sauteemixture over medium heat, stirring often, until zucchini is tender (20 minutes). Toss in chopped tomatoes and continue to sauteeuntil tomatoes are thoroughly heated (5 minutes). Turn mixture into a serving dish; Sprinkle with parmesan cheese.
