West Coast Broiled Flank Steak

Recipe Ingredients

1 1/2 lbs 681g / 24ozFlank steak
1   Onion - thinly sliced
1 teaspoon 5mlFresh grated lemon peel
1/2 cup 118mlFreshly squeezed lemon juice
2 tablespoons 30mlSugar
1/2 teaspoon 2.5mlSalt
1/2 teaspoon 2.5mlOregano - crushed
1/8 teaspoon 0.6mlFreshly ground black pepper
2 tablespoons 30mlSoy sauce
1 tablespoon 15mlButter

Recipe Instructions

Trim any fat or membrane from the steak. With knife, score steak 1/8 inch deep on both sides in diamond pattern. Layer 1/2 onions in plastic bag or glass dish. Place steak on top of onions, cover with remaining onion. Thoroughly combine remaining ingredients, except butter and pour over steak, top with remaining onion.

Marinate 2 - 3 hours or overnight in refrigerator or overnight, turning several times. Remove steak from marinade, wipe partially dry with paper towel. Drain onions and reserve.

Broiler:

Place steak on cold broiler pan 3 - 5 inches from heat source. Broil 3 -5 minutes per side.

Grill:

Prepare charcoal grill and grill over medium coals 3-5 minutes per side or until internal temperature is 135F for rare, 145F for medium.

Meanwhile saute onions in butter until soft. To serve, cut steak across grain in very thin slices; top with onions.
