Zucchini Frittata Recipe - Cooking Index
2 cups | 474ml | Zucchini - sliced |
1 cup | 62g / 2.2oz | Onion - minced (small) |
1 tablespoon | 15ml | Margarine |
1 1/2 teaspoons | 7.5ml | Olive oil |
6 | Eggs - beaten | |
1 tablespoon | 15ml | Parsley - chopped |
1 teaspoon | 5ml | Ground fennel |
1/2 teaspoon | 2.5ml | Ground rosemary |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Pepper |
2 tablespoons | 30ml | Cheddar cheese |
In large oven-proof skillet on medium-high heat, cook zucchini and onion in margarine and oil for about 5 minutes, or until tender. Combine eggs and seasonings; pour over vegetables.
Cook on medium heat without stirring until bottom of mixture has set but top is still soft. Sprinkle grated cheese on top.
Place under preheated broiler about 3 minutes, or until cheese is melted and top is brown.
