Tutti-Fruity Chicken Kabobs Recipe - Cooking Index
1/2 cup | 118ml | Oil |
1/2 cup | 118ml | Honey |
1 tablespoon | 15ml | Peeled and chopped fresh gingerroot |
1 tablespoon | 15ml | Soy sauce |
4 | Chicken breast halves | |
1/2 | Fresh peeled and cored pineapple - cut in 1 in | |
2 | Oranges - peeled, quartered, cut in 1 in cubes | |
Hot cooked rice | ||
Seedless red and green grapes for garnish |
* boneless skinless -- cut into 1-inch cubes
In large bowl combine oil, honey, ginger, and soy sauce. Remove 1/4 cup and reserve. Place chicken in marinade, stirring to coat. Cover and refrigerate for 3 hours.
Heat grill or broiler.
Thread chicken, pineapple and oranges onto skewers.
Cook about 5 minutes. Baste with reserved marinade and turn.
Cook 5 minutes, or until chicken is no longer pink in center.
Serve with rice and
Garnish with grapes.
