1 lb | 454g / 16oz | Italian roma tomatoes |

1/2 cup | 118ml | Olive oil |
1/3 cup | 78ml | White vinegar |
1 | Cilantro - chopped leaves | |

1/4 cup | 49g / 1.7oz | Sugar |
6 | Garlic - minced | |
1 | Jalapeno - seeded and diced | |
1 | Red bell pepper - chopped | |
2 teaspoons | 10ml | Salt |
1 teaspoon | 5ml | Pepper - freshly ground |
In a pot combine all ingredients. Cover and simmer about an hour.
Use as a topping for grilled fish.
