Tomatillo Salsa

Recipe Ingredients

8   Tomatillos - husked, (medium) and coarsely chopped
1 tablespoon 15mlFinely-diced red onion
1/2 tablespoon 7.5mlMinced jalapeno
2 tablespoons 30mlFresh lime juice
2 tablespoons 30mlCoarsely-chopped cilantro
1 tablespoon 15mlOlive oil
1 teaspoon 5mlHoney
  Salt - to taste
  Freshly-ground black pepper - to taste

Recipe Instructions

Combine the tomatillos, onion, jalapeno, lime juice, cilantro, olive oil and honey in a bowl.

Season with salt and pepper. Refrigerate covered, for up to 1 day. Bring to room temperature before serving.

This recipe yields about 1 1/2 cups of salsa.
