1/4 cup | 59ml | Water |
1/2 teaspoon | 2.5ml | Onion powder |
1/4 cup | 59ml | Soy sauce |
1/2 teaspoon | 2.5ml | Garlic powder |
1/4 cup | 59ml | Dry white wine |
1/2 teaspoon | 2.5ml | Ground ginger |
1/4 cup | 40g / 1.4oz | Brown sugar |
Use this marinade recipe and place birds in cool brine for 6 hours. Rinse and dry on paper towels for 1 hour.
Hot smoke at 240F for about 2 hours with choice of wood, hickory, etc.
