Red Beans and Rice with Smoked Sausage

Recipe Ingredients

1 lb 454g / 16ozSmoked sausage - about one pound, spl
1 teaspoon 5mlVegetable oil
1/2 cup 73g / 2.6ozSmoked ham (3-ounces) - diced
1/2 cup 31g / 1.1ozChopped onion
1   Garlic - minced
1/4 teaspoon 1.3mlHot pepper sauce - to taste
1/2 teaspoon 2.5mlSalt
1/8 teaspoon 0.6mlBlack pepper
1 teaspoon 5mlTomato - diced (medium)
2 cups 474mlChicken broth
1 cup 160g / 5.6ozLong-grain enriched rice
1   Red beans - drained

Recipe Instructions

Broil or grill sausage until browned, keep warm.

Meanwhile, in a large, deep skillet with tight-fitting lid, saute ham, onion and garlic in oil until lightly browned, about 2-4 minutes.

Stir in all remaining ingredients and bring to a boil.

Lower heat, cover and simmer until rice is tender, about 15-20 minutes. Serve immediately with grilled sausage.
