Red Beans and Rice with Smoked Sausage Recipe - Cooking Index
1 lb | 454g / 16oz | Smoked sausage - about one pound, spl |
1 teaspoon | 5ml | Vegetable oil |
1/2 cup | 73g / 2.6oz | Smoked ham (3-ounces) - diced |
1/2 cup | 31g / 1.1oz | Chopped onion |
1 | Garlic - minced | |
1/4 teaspoon | 1.3ml | Hot pepper sauce - to taste |
1/2 teaspoon | 2.5ml | Salt |
1/8 teaspoon | 0.6ml | Black pepper |
1 teaspoon | 5ml | Tomato - diced (medium) |
2 cups | 474ml | Chicken broth |
1 cup | 160g / 5.6oz | Long-grain enriched rice |
1 | Red beans - drained |
Broil or grill sausage until browned, keep warm.
Meanwhile, in a large, deep skillet with tight-fitting lid, saute ham, onion and garlic in oil until lightly browned, about 2-4 minutes.
Stir in all remaining ingredients and bring to a boil.
Lower heat, cover and simmer until rice is tender, about 15-20 minutes. Serve immediately with grilled sausage.
