Grilled Rainbow Trout With Apricot Salsa

Recipe Ingredients

4   Rainbow trout fillets
1 cup 146g / 5.1ozFresh apricots - diced
1 cup 146g / 5.1ozAvocado - diced (1/2 cup) (small)
3/4 cup 109g / 3.8ozFresh pineapple - diced
1/4 cup 36g / 1.3ozRed pepper - diced
1 1/4 tablespoons 18mlLime juice
1 teaspoon 5mlCilantro - finely chopped
  Fresh ground pepper - to taste

Recipe Instructions

In a medium bowl, combine apricots, pineapple, avocado and red pepper.

Sprinkle with lime juice and cilantro; toss and chill.

Grill trout on oiled grate for 2 minutes.

Turn trout and grill for 2 more minutes, or until trout turns opaque.

Top with apricot salsa and serve immediately.
