1 tablespoon | 15ml | Parsley - (finely chopped) |

1. Trim chops and wipe. Brush with butter or salad oil and sprinkle with a little salt and pepper.
2. Cook under a hot grill for 2-3 minutes Turn chops and cook other side. Continue cooking for about 10 minutes, turning frequently.
3. Meanwhile make lemon butter - allow butter to become soft, then beat with a wooden spoon until creamy. Blend in salt, parsley and lemon juice.
4. Place cooked chops on the hot dish, surrounded with chips, grilled tomatoes and mushrooms. Just before serving place a large knob of lemon butter on each chop. .
