Grilled Fish With Pineapple-Cilantro Sauce

Recipe Ingredients

1 section  Pineapple - (about 2 lb) (medium)- peeled cored and
2 tablespoons 30mlCold water
2 tablespoons 30mlSugar
3/4 cup 177mlUnsweetened pineapple juice
  Salt
2 tablespoons 30mlLime juice
  Pepper to taste
2   Garlic - minced
6   Halibut, salmon or haddock - steaks or fillets
1/2 teaspoon 2.5mlJalapeno pepper - to 1 tsp grilled
2 tablespoons 30mlMinced cilantro
1 tablespoon 15mlCornstarch

Recipe Instructions

Heat Pineapple, Juices, Garlic and Jalapeno pepper to boiling in a medium saucepan; Reduce heat and simmer, uncovered about 5 minutes. Stir in cilantro; Heat to boiling.

Mix Cornstarch and cold water, Stir into boiling mixture. Boil, stirring constantly, until thickened. Remove from heat; Cool 2-3 minutes.

Stir in sugar; Season to taste with salt and pepper.

Serve warm over Fish or Pork.
