Grilled Chicken Dijon Vinaigrette Salad Recipe - Cooking Index
3/4 cup | 177ml | Vegetable oil |
1/4 cup | 59ml | Red wine vinegar |
2 tablespoons | 30ml | Grey Poupon Dijon mustard |
1/2 teaspoon | 2.5ml | Salt |
1/4 teaspoon | 1.3ml | Ground black pepper |
6 cups | 660g / 23oz | Mixed lettuce greens |
1 cup | 237ml | Snow peas - blanched |
1 cup | 237ml | Red pepper - cut in strips (small) |
1 cup | 237ml | Sliced mushrooms |
6 | Chicken breasts - boneless, skinless |
In small bowl, whisk oil, vinegar, mustard, salt and pepper; set aside. Arrange lettuce, snow peas, red pepper and mushrooms on 6 individual salad plates; set aside.
Grill chicken 6" from heat source for 10 to 15 minutes or until done, turning once.
Diagonally slice chicken breasts and arrange on each salad.
Serve with vinaigrette.
