Duck A La Orange - Grilled Version Recipe - Cooking Index

1 1/2 teaspoons | 7.5ml | Garlic powder |
1 1/2 | Onion powder | |
1 1/2 teaspoons | 7.5ml | Pepper |
3 | Lemon halves | |
3 | Orange halves | |
1/4 cup | 49g / 1.7oz | Butter |
1/4 cup | 59ml | Frozen concentrate thawed |
And undiluted orange juice | ||
1/4 cup | 40g / 1.4oz | Finely packed brown sugar |
1 tablespoon | 15ml | Grated orange zest |
Place each duck or duck on a large sheet of heavy duty aluminum foil sprinkle each with 1/2 tsp garlic powder and onion powder and pepper. Squeeze juice of half lemon and orange over them. Place remaining lemon and orange halves inside duck cavity wrap tightly with several layers of foil.
Cook covered with grill lid over med hot coals (350- 400F) 40 minutes or until meat thermometer inserted in thickest part of duck registers 180 combine butter and remaining ingredients in a saucepan cook over med heat stirring constantly until thickens serve over duck.
Now you can do this in a roasting pan in over at same temp about 350F for 40 minutes also in the foil.
