Anticucho-Style Grilled Chicken Recipe - Cooking Index
2 | Boneless chicken breasts | |
2 | Pickled jalapenos | |
2 teaspoons | 10ml | Pickled jalapeno juice |
1/2 cup | 118ml | Fresh lime juice |
1/4 cup | 59ml | Soy sauce |
1/2 cup | 118ml | Vegetable oil |
5 | Peeled garlic cloves | |
1 teaspoon | 5ml | Cracked black pepper |
1 | Fistful of fresh cilantro - (remove the stems) |
Combine and blend all ingredients, except chicken, in blender until smooth. Marinate chicken for 30-40 minutes. Grill over medium hot coals until cooked through. Baste with the reserved marinade several times during cooking.
Serve with lime wedges, avocado slices and pico de gallo.
