Hot Potato Salad Recipe - Cooking Index
3 cups | 711ml | Cooked cubed potatoes |
1 1/2 cups | 219g / 7.7oz | Coarsely chopped apples |
1 | Bacon | |
1/2 cup | 31g / 1.1oz | Chopped onion |
1/2 cup | 55g / 1.9oz | Celery - chopped |
1 1/2 tablespoons | 22ml | Flour |
3/4 cup | 177ml | Apple juice - (or water) |
1/3 cup | 78ml | Vinegar |
1/3 cup | 65g / 2.3oz | Sugar |
In skillet, cook bacon. Remove and drain. Pour off all but 3 T bacon fat, add onion and celery and stir fry 1-2 minutes. Blend in flour. Add juice and vinegar, stirring until mixture thickens. Add sugar.
Preheat oven to 350F.
Place potatoes, apples, and crumbled bacon in greases 1 1/2 qt casserole. Add skillet mixture, mixing lightly. Cover and bake 30 minutes.
