1/2 cup | 99g / 3.5oz | Butter or margarine |
1/4 cup | 49g / 1.7oz | Shortening |
1 cup | 160g / 5.6oz | Brown sugar; firmly packed |
1 | Egg; large | |
1/4 cup | 59ml | Molasses |
2 1/2 cups | 156g / 5.5oz | Flour; unbleached - unsifted |
1/4 teaspoon | 1.3ml | Salt |
2 teaspoons | 10ml | Baking soda |
1 teaspoon | 5ml | Cinnamon |
1/2 teaspoon | 2.5ml | Ginger |
1/2 teaspoon | 2.5ml | Cloves; ground |
1/2 teaspoon | 2.5ml | Allspice; ground |
Cream butter, shortening, and brown sugar thoroughly. Blend in egg and molasses. Sift together the remaining ingredients.
Stir into sugar mixture. Shape dough into 3/4-inch balls. Place 2 inches apart on greased baking sheets.
Flatten each ball with the bottom of a glass that has been greased and dipped into sugar. Bake in preheated 350F oven for 12 to 15 minutes. Cool cookies on racks and store in airtight tins.
Makes 4 dozen cookies.
