1 tablespoon | 15ml | Tomato paste |
2 lbs | 908g / 32oz | Italian plum tomatoes |
1/2 teaspoon | 2.5ml | Basil - dried |
1 | Onion - chopped | |
1/4 teaspoon | 1.3ml | Pepper - freshly ground |
1 | Celery; stalk - chopped | |
1/2 teaspoon | 2.5ml | Salt |
2 cups | 474ml | Chicken broth |
1/2 cup | 118ml | Yogurt |
Cut tomatoes into wedges and place in 1 1/2-quart saucepan with all ingredients except yogurt. Simmer uncovered 30 minutes. Strain to remove tomato skins and seeds. Adjust seasonings. Garnish with spoonfuls of yogurt.
