Fillet Of Beef With Cilantro Lime Sauce Recipe - Cooking Index
1/2 | Beef - trimmed (2-1/2 to 3 lbs) | |
2 tablespoons | 30ml | Olive oil |
1 tablespoon | 15ml | Cracked black pepper |
Cilantro Sauce | ||
1 cup | 16g / 0.6oz | Cilantro leaves |
1/2 cup | 20g / 0.7oz | Parsley leaves |
2 | Limes - juice and zest only | |
1 | Garlic clove - crushed | |
1 tablespoon | 15ml | Dijon mustard |
1 1/4 cups | 78g / 2.8oz | Cornichons |
1 teaspoon | 5ml | Ground coriander |
Preheat oven to 450F.
Rub fillet with olive oil and pepper.
Roast 20 to 25 minutes for rare. Cool; refrigerate. Serve cold with cilantro sauce.
CILANTRO SAUCE: Combine all ingredients in a blender and process until leaves are roughly chopped and ingredients are blended. Refrigerate until ready to serve.
