1 lb | 454g / 16oz | Ground smoked ham - cooked |
1 lb | 454g / 16oz | Ground pork |
3 | Eggs - large | |
2 teaspoons | 10ml | Salt |
1/2 teaspoon | 2.5ml | Pepper |
1/4 teaspoon | 1.3ml | Nutmeg - ground |
Chipotle sauce - * | ||
1/2 cup | 73g / 2.6oz | Dry bread crumbs |
1/4 cup | 15g / 0.5oz | Instant corn tortilla mix |
1/2 cup | 118ml | Vegetable oil |

Mix ground beef, fully cooked ham, ground pork, eggs, salt, pepper, and the nutmeg. Shape into a loaf.
Cover and refrigerate for 1 hour.
Prepare Chipolte Sauce and set aside. Mix bread crumbs and tortilla mix. Coat meat loaf with bred crumb mixture.
Heat oil in 10-inch skillet until hot.
Cook meat loaf in oil over medium heat until brown on all sides. Pour Chipotle Sauce over meat loaf.
Heat to boiling and reduce the heat.
Cover and simmer until done; about 1 hour.
