Sun-Dried Tomato Pesto Recipe - Cooking Index
1 cup | 237ml | Oil-packed sun dried tomatoes - drained (ca. 6 oz.) |
1/2 cup | 73g / 2.6oz | Grated parmesan cheese |
1/2 cup | 73g / 2.6oz | Fresh basil - chopped |
1/4 cup | 59ml | Pine nuts - toasted |
6 | Garlic - minced | |
3/4 cup | 177ml | Olive oil - * see note |
* use some from the tomatoes jar
Combine tomatoes, Parmesan, basil, pine nuts, and garlic in processor. With machine running, gradually add oil until smooth paste forms. Add salt and pepper to taste.
