Salmon Cakes With Basil And Lime Mayonnaise Recipe - Cooking Index

| 3 | Green onions - sliced | |
| 2 | Garlic cloves - chopped | |
| 2 tablespoons | 30ml | Cilantro - chopped |
| 1 tablespoon | 15ml | Red curry paste |
| 1/4 cup | 59ml | Fish sauce |
| 4 tablespoons | 60ml | Corn starch |
| 1 | Black pepper | |
| 1 | White pepper | |
| 1 | Egg (large) | |
| 1 teaspoon | 5ml | Sugar |
| 1 | Peanut oil - for frying | |
| Mayo Sauce | ||
| 1/4 cup | 59ml | Mayonnaise |
| 1 teaspoon | 5ml | Turmeric |
| 1 teaspoon | 5ml | Basil |
| 1/4 teaspoon | 1.3ml | Cayenne pepper |
| 1 | Black pepper | |
| 1 | Fish sauce | |
| 1 | Lime juice |
Combine all ingredients except peanut oil. heat frying pan on medium heat.
Form salmon into small patties and pan fry in a little peanut oil.
Serve with Mayo Sauce and some chopped cilantro and green onions.
Yield: 10 cakes
