Prawns On Lemon Grass Skewers

Recipe Ingredients

300   Prawns - minced
1 tablespoon 15mlGarlic paste - minced
1 teaspoon 5mlCoriander root - finely chopped
1 teaspoon 5mlFish sauce
1 teaspoon 5mlLime leaf - finely chopped
1/2 teaspoon 2.5mlSugar
  Lemon grass stalks - trimmed
  Sauce
6 tablespoons 90mlRice vinegar
4 tablespoons 60mlSugar
1/2 teaspoon 2.5mlSalt
1   Garlic clove - very finely chopped
2   Red chilies - seeded, finely (large)
  Chopped
1 teaspoon 5mlCoriander leaves - finely chopped

Recipe Instructions

First make the sauce, boil the sugar and vinegar to a syrup then add the garlic, chilies and salt off the heat. Allow to cool. When cool add the coriander.

Mix all the prawn ingredients but the lemongrass together. Mould around lemongrass sticks and grill on all sides until golden brown.
