300 | Prawns - minced | |
1 tablespoon | 15ml | Garlic paste - minced |
1 teaspoon | 5ml | Coriander root - finely chopped |
1 teaspoon | 5ml | Fish sauce |
1 teaspoon | 5ml | Lime leaf - finely chopped |
1/2 teaspoon | 2.5ml | Sugar |
Lemon grass stalks - trimmed | ||
Sauce | ||
6 tablespoons | 90ml | Rice vinegar |
4 tablespoons | 60ml | Sugar |
1/2 teaspoon | 2.5ml | Salt |
1 | Garlic clove - very finely chopped | |
2 | Red chilies - seeded, finely (large) | |
Chopped | ||
1 teaspoon | 5ml | Coriander leaves - finely chopped |
First make the sauce, boil the sugar and vinegar to a syrup then add the garlic, chilies and salt off the heat. Allow to cool. When cool add the coriander.
Mix all the prawn ingredients but the lemongrass together. Mould around lemongrass sticks and grill on all sides until golden brown.
