Pineapple Vegetarian Fried Rice Recipe - Cooking Index
4 tablespoons | 60ml | Vegetable oil |
1 | Yellow onion - finely chopped | |
3 | Garlic cloves - chopped | |
1 cup | 110g / 3.9oz | Carrots - chopped |
1 cup | 160g / 5.6oz | Green beans chopped |
1 cup | 237ml | Pineapple chunks |
3 cups | 480g / 16oz | Rice - cooked |
1 tablespoon | 15ml | Tomato ketchup |
1 teaspoon | 5ml | Salt |
1 | Cucumber - thinly sliced | |
4 tablespoons | 60ml | Green onion - chopped |
4 tablespoons | 60ml | Cilantro leaves - chopped |
In a wok, heat the oil over medium heat & stir-fry the onion & garlic until golden brown. Add the carrots & green beans & stir-fry for 2 minutes longer Add the pineapple, rice, ketchup & salt. Mix well & stir-fry for another 3 minutes. Arrange the cucumber around the serving platter. Pour the rice into the center. Garnish with green onion & fresh cilantro leaves.
