Recipe Ingredients

2 teaspoons 10mlEggs - beaten (large)
1/4 cup 40g / 1.4ozPalm or brown sugar
3/4 cup 120g / 4.2ozRice flour
1/4 cup 15g / 0.5ozShredded coconut meat
1/4 cup 59mlIce water
4   Firm - ripe bananas, to 6
1/4 cup 59mlVegetable oil

Recipe Instructions

1. Mix the eggs thoroughly with the brown sugar.

2. Add the rice flour, coconut and ice water and mix well.

3. Peel the bananas. Cut in half lengthwise, then in half crosswise. Dip each quarter in the batter and coat thoroughly.

4. Heat the oil. Saute bananas until crisp and brown, turning once. Drain on paper towels. Serve immediately.
