2 | Garlic cloves - finely chopped | |
2 | Red chilies - finely chopped (small) | |
4 oz | 113g | Peeled prawns |
1 tablespoon | 15ml | Fish sauce |
1/4 teaspoon | 1.3ml | Sugar |
1 tablespoon | 15ml | Light soy sauce |
2 cups | 320g / 11oz | Cooked rice |
1/2 cup | 31g / 1.1oz | Onion - slivered (small) |
1/2 | Red or green sweet pepper - slivered | |
1/2 teaspoon | 2.5ml | Ground white pepper |
1 | Spring onion, green part only - slivered into 1" | |
Coriander leaves - to garnish |
In a work or frying pan, heat the oil until a light haze appears. Add the garlic and fry until golden brown. Add the chilies and the prawns and stir quickly. Add the fish sauce, sugar and soy sauce; stir and cook for a few seconds until the prawns are cooked through. Add the cooked rice and stir thoroughly. Add the onion, sweet pepper, white pepper and spring onion and stir quickly to mix. Turn onto a serving dish and garnish with the coriander leaves.
