Coconut Shrimp - 4 Recipe - Cooking Index
1 1/2 cups | 355ml | Oil |
1 cup | 62g / 2.2oz | Flour |
1 cup | 237ml | Beer |
14 oz | 397g | Coconut - desiccated |
1 lb | 454g / 16oz | Prawns |
- shelled and cleaned |
Pour oil into large fryer and heat to 375F.
Mix together flour and beer until it makes a batter.
Coat shrimp in batter, then roll in coconut.
Fry shrimp in small batches about 2 to 3 minutes until golden and curled. Drain on paper towels.
