Chicken With Lemon Grass And Chiles - Ga Xao Xa Ot

Recipe Ingredients

3 lbs 1362g / 48ozChicken
4   Garlic
1   Onion (large)
3 tablespoons 45mlVegetable oil
1   Salt
2 tablespoons 30mlMinced lemon grass
1 teaspoon 5mlGround chilies
4 tablespoons 60mlFish sauce - (nuoc nam)
1 tablespoon 15mlGranulated sugar
1 tablespoon 15mlCaramel sauce
1 cup 237mlWater

Recipe Instructions

Rinse chicken and dry well. Cut into small pieces. Peel garlic and slice finely. Cut onion in half lengthwise and then cut lengthwise into 1/2 inch strips. Heat oil in large frying pan over medium heat. Add a pinch of salt, garlic and onion. Fry over medium heat until onion is opaque. Add lemon grass and chile.

Fry 1 - 2 minutes until fragrant. Add chicken and cook until lightly browned. Add fish sauce, sugar and caramel sauce.
