A Jad (Cucumber Pickle)

Recipe Ingredients

4 tablespoons 60mlRice vinegar
1 teaspoon 5mlSugar
3 tablespoons 45mlCucumber, very coarsely chopped, or sliced
2   Shallots, chopped
3   Red and green prik ki nu - (birdseye chilies), thinly sliced.

Recipe Instructions

Combine the ingredients, and leave to stand overnight.

Each diner should have a small bowl of nam jim and a small bowl of a jad. However the satay themselves are normally served "communally".
