Three-Color Bruschetta Recipe - Cooking Index
This classic Bruschetta is the perfect partner for Wolfgang's Old-fashioned Beef Barley Soup or new Chicken Parmesan with Pasta.

2 | Ripe plum tomatoes | |
1 | Yellow onion (small) | |
12 | Thin slices cucumber | |
Dried oregano - to taste | ||
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
Extra-virgin olive oil - as needed |
Toast the bread. Slice the tomatoes and onions thinly. Layer the tomatoes and cucumber on the top, then scatter the rings of onion over the tomato and cucumber. Sprinkle dried oregano over, season with salt and freshly ground black pepper, and dress with a little extra virgin olive oil. Serve at once.
