Spicy Sausage Hash Browns Recipe - Cooking Index
Delicious with Wolfgang's Thick Country Vegetable Soup or Old World Minestrone.

Spicy Italian sausage | ||
1 | Onion - finely chopped (large) | |
1 tablespoon | 15ml | Olive oil |
1 tablespoon | 15ml | Baking potato - chopped 1/2" dice (large) |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||
1 | Green onion - sliced |
Use a cast-iron skillet and saute the sausage and the onion in the olive oil over a medium heat until the onion turns golden.
Stir in the diced potato and season with salt and pepper. Arrange the resulting mixture evenly in the skillet, cover and cook for 20 minutes.
Remove the lid, turn up the heat for 3 or 4 minutes and stir until you have perfect hash. Sprinkle sliced green onion over hash and serve.
This recipe yields 2 servings.
