Really Orange Salad Recipe - Cooking Index

2 tablespoons | 30ml | Flavored vinegar |

1 tablespoon | 15ml | Orange juice |
4 tablespoons | 60ml | Extra-virgin olive oil |
1 tablespoon | 15ml | Grated fresh ginger |
3 | Really crisp lettuce leaves - (to 4) | |

1/2 teaspoon | 2.5ml | Caraway seeds |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Clean the carrots and julienne them (small strips). Steam them for ten minutes and allow to cool.
Skin the oranges, remove the pith, and slice into thin slices.
Reduce the vinegar in a small pot over a low heat to half its quantity. Add a pinch of salt and pepper, the orange juice, and 4 tablespoons of olive oil. Pour this dressing over the carrots, add the ginger, and mix well. Chill in the refrigerator for an hour.
Wash and dry the lettuce; shred or cut into small pieces. Arrange the oranges on the bottom of a serving plate, then add the lettuce, carrots, and dressing. Sprinkle caraway seeds over salad prior to serving.
This recipe yields 2 servings.
