Tangerine Sherbet

A perfect light and refreshing dish for a summer evening or as an intermezzo for a grand dinner. This is the perfect recipe for the beginner cook to make a gourmet dessert. I would serve it on a biscotti with fresh berries. And, of course, you can use other fruit such as lemon, lime or grapefruit if tangerines aren't available.

Recipe Ingredients

3 cups 711mlTangerine juice - (abt 18 tangerines)
  Zest of 10 tangerines - grated or minced
3/4 cup 177mlFresh lemon juice - (5 to 6 lemons)
  Zest of 4 lemons
1 1/2 cups 492g / 17ozSimple Syrup - (see recipe)
1/4 cup 59mlMandarine Napoleon liqueur

Recipe Instructions

In a bowl, mix together all the ingredients. Strain through a fine mesh sieve into a bowl. Chill.

Freeze in an ice cream freezer according to the manufacturer's directions.

To make a surprising and special dessert, serve a scoop of Tangerine Sherbert on an almond biscotti with a few fresh berries.

This recipe yields 1 1/2 quarts.
