Stir Fried Wild Rice With Apples And Sun Dried Cherries Recipe - Cooking Index
This dish is a dish that can be served year round, even during the holidays. It has a variety of flavors. The recipe is a great accompaniment for meat, fish or poultry dishes. The addition of curry powder goes great with the fruit and the onion.
Type: Rice2 tablespoons | 30ml | Olive oil |
2 tablespoons | 30ml | Finely-minced onions |
1 tablespoon | 15ml | Curry powder |
1 | Apple - peeled, cored, | |
And cut into small cubes | ||
1 cup | 146g / 5.1oz | Chopped mushrooms |
1/4 cup | 15g / 0.5oz | Sun-dried cherries |
1 1/2 cups | 240g / 8.5oz | Cooked wild rice |
Salt - to taste | ||
Freshly-ground black pepper - to taste |
Heat saute pan. Add olive oil and saute minced onions and curry powder until translucent. Add chopped apple, mushrooms and sun-dried cherries and cook until mushrooms are cooked through.
Add cooked wild rice and stir-fry until rice is hot and tender. Add salt and pepper to taste.
This recipe yields 2 servings.
