Dried Apricot Vinaigrette Recipe - Cooking Index
1/2 cup | 118ml | Apple juice |
3 tablespoons | 45ml | Apricots |
1/8 teaspoon | 0.6ml | Ground ginger |
3 tablespoons | 45ml | Lime juice |
2 tablespoons | 30ml | Apple cider vinegar |
2 tablespoons | 30ml | Maple syrup |
= (or brown rice syrup) | ||
1/4 teaspoon | 1.3ml | Salt |
In a small saucepan, combine the apple juice, apricots, and ginger, and simmer over low heat for 5 minutes. Remove saucepan from the heat and set aside for 10 minutes to cool.
Transfer the apricot mixture to a blender or food processor. Add the remaining ingredients and blend until smooth. Transfer the mixture to an air-tight container and store in the refrigerator for up to 1 week.
This recipe yields 1 cup.
