Chilled Catalina Cantaloupe Soup

Recipe Ingredients

6 cups 1422mlCantaloupe in 1/2" cubes
1/2 cup 118mlOrange juice
3 tablespoons 45mlLemon juice
1 cup 237mlPlain soy yogurt
2 tablespoons 30mlBrown rice syrup
  Garnishes
  Edible flowers
  = (such as pansies or nasturtiums)
  Thinly-sliced melon

Recipe Instructions

In a blender or food processor, combine the cantaloupe, orange juice, and lemon juice, and blend well to form a smooth puree. Transfer the mixture to a glass bowl and whisk in the soy yogurt and brown rice syrup. Cover and chill for several hours.

Garnish individual servings with a few edible flowers or slices of melon.

This recipe yields 6 cups.
