2 | Avocados - peeled, pitted, and diced | |
4 teaspoons | 20ml | Lemon juice |
4 cups | 948ml | Boston or bibb lettuce - washed well, patted dry, and torn bite-size pieces |
4 cups | 160g / 5.6oz | Red-tipped loose-leaf lettuce - washed well, patted dry, and torn bite-size pieces |
4 cups | 948ml | Spinach - triple washed, patted dry, and torn bite-size pieces |
3 | Oranges - peeled, and cut into segments | |
1 | Pomegranate - seeds separated from yellow membrane | |
1 1/2 cups | 165g / 5.8oz | Sweet And Spicy Mixed Nuts - (see recipe) |
Pomegranate Vinaigrette - (see recipe) |
In a small glass bowl, place the diced avocado, drizzle the lemon juice over the top, and toss gently to thoroughly coat the avocado with the juice to prevent discoloration.
In a large bowl, toss together all of the greens. Scatter the avocado mixture, oranges, pomegranate seeds, and Sweet and Spicy Mixed Nuts over the greens, and toss gently to combine. Top individual servings with the Pomegranate Vinaigrette.
