Apple And Cucumber Waldorf Salad

Recipe Ingredients

2 cups 292g / 10ozDiced cored Gala apples
1 1/2 teaspoons 7.5mlLemon juice
2 cups 474mlCucumber - peeled, quartered, seeded and sliced
1 cup 110g / 3.9ozCelery - thinly sliced on the diagonal
1/3 cup 48g / 1.7ozShallots - diced
1/3 cup 48g / 1.7ozRaw walnuts - roughly chopped
2 tablespoons 30mlRaw sunflower seeds
2 tablespoons 30mlFreshly-chopped parsley
2 tablespoons 30mlFreshly-chopped mint
1 tablespoon 15mlFreshly-chopped dill
1 cup 237mlSesame-Flax Dressing - (see recipe)
1/4 teaspoon 1.3mlSea salt

Recipe Instructions

In a medium bowl, place the diced apple, sprinkle the lemon juice over it, and toss well to coat thoroughly (to prevent discoloration). Add the cucumber, celery, shallots, walnuts, sunflower seeds, parsley, mint, and dill, and toss gently to combine.

Drizzle the Sesame-Flax Dressing over the apples and vegetables, sprinkle them with the salt, and toss well to thoroughly coat the mixture with the dressing. Serve immediately or chill, if desired.
