Apple And Cucumber Waldorf Salad Recipe - Cooking Index
2 cups | 292g / 10oz | Diced cored Gala apples |
1 1/2 teaspoons | 7.5ml | Lemon juice |
2 cups | 474ml | Cucumber - peeled, quartered, seeded and sliced |
1 cup | 110g / 3.9oz | Celery - thinly sliced on the diagonal |
1/3 cup | 48g / 1.7oz | Shallots - diced |
1/3 cup | 48g / 1.7oz | Raw walnuts - roughly chopped |
2 tablespoons | 30ml | Raw sunflower seeds |
2 tablespoons | 30ml | Freshly-chopped parsley |
2 tablespoons | 30ml | Freshly-chopped mint |
1 tablespoon | 15ml | Freshly-chopped dill |
1 cup | 237ml | Sesame-Flax Dressing - (see recipe) |
1/4 teaspoon | 1.3ml | Sea salt |
In a medium bowl, place the diced apple, sprinkle the lemon juice over it, and toss well to coat thoroughly (to prevent discoloration). Add the cucumber, celery, shallots, walnuts, sunflower seeds, parsley, mint, and dill, and toss gently to combine.
Drizzle the Sesame-Flax Dressing over the apples and vegetables, sprinkle them with the salt, and toss well to thoroughly coat the mixture with the dressing. Serve immediately or chill, if desired.
