Cilantro-Tofu Cream Recipe - Cooking Index
1 | Mori-Nu silken style tofu - (12.3 oz) - firm | |
1/3 cup | 5.3g / 0.2oz | Freshly-chopped cilantro |
1/3 cup | 78ml | Soy milk |
3 tablespoons | 45ml | Lemon juice |
1 tablespoon | 15ml | Nutritional yeast |
1/2 teaspoon | 2.5ml | Salt |
In a food processor or blender, combine all of the ingredients and puree until smooth. Transfer mixture to a glass bowl. Cover and chill for 1 hour to allow the flavors to blend.
Serve as a topping for soups, salads, and Mexican dishes just as you would use sour cream.
This recipe yields 2 1/2 cups.
