Spicy Barbecue Sauce

Use this for the Seitan Barbecue Sandwiches (see recipe) or on veggie burgers and dogs.

Recipe Ingredients

  Seasoning
1/2 teaspoon 2.5mlSalt
1/4 teaspoon 1.3mlDried thyme
1/4 teaspoon 1.3mlFreshly-ground black pepper
1/4 teaspoon 1.3mlDried oregano
1/4 teaspoon 1.3mlWhite pepper
1/4 teaspoon 1.3mlCelery seed
1/8 teaspoon 0.6mlCayenne
  Sauce
1 tablespoon 15mlVegetable oil
1/2 cup 31g / 1.1ozChopped onion
2 teaspoons 10mlMinced garlic
1/2 teaspoon 2.5mlChopped chipotle chile
1/2 cup 118mlTomato paste
1/4 cup 59mlFresh lime juice
1/4 cup 59mlOrange juice
1/4 cup 59mlTamari or soy sauce
2 tablespoons 30mlPrepared mustard
  = (preferably stone ground)
1 tablespoon 15mlPrepared horseradish
1/4 teaspoon 1.3mlHot pepper sauce
3 tablespoons 45mlMaple syrup
1 teaspoon 5mlApple cider vinegar
2   Liquid smoke - (to 3) - to taste

Recipe Instructions

In small bowl, mix seasoning ingredients. Set aside.

In medium skillet, heat oil over medium heat. Add onion and garlic and cook, stirring often, 1 minute. Stir in seasoning mix, chipotle chile, tomato paste and 1 cup water and cook, stirring occasionally, 5 minutes.

Transfer tomato mixture to blender or food processor and process until onion begins to break down, 30 to 60 seconds. Add lime juice, orange juice, tamari, mustard, horseradish, hot pepper sauce, syrup, vinegar and liquid smoke. Process until smooth.

Transfer barbecue sauce to airtight container and store in refrigerator for up to 1 week.

This recipe yields 2 cups.
