Spicy Barbecue Sauce Recipe - Cooking Index
Use this for the Seitan Barbecue Sandwiches (see recipe) or on veggie burgers and dogs.

1/4 teaspoon | 1.3ml | Freshly-ground black pepper |
1/4 teaspoon | 1.3ml | Dried oregano |
1/4 teaspoon | 1.3ml | White pepper |
1/4 teaspoon | 1.3ml | Celery seed |
1/8 teaspoon | 0.6ml | Cayenne |
Sauce | ||
1 tablespoon | 15ml | Vegetable oil |
1/2 cup | 31g / 1.1oz | Chopped onion |
2 teaspoons | 10ml | Minced garlic |
1/2 teaspoon | 2.5ml | Chopped chipotle chile |
1/2 cup | 118ml | Tomato paste |
1/4 cup | 59ml | Fresh lime juice |
1/4 cup | 59ml | Orange juice |
1/4 cup | 59ml | Tamari or soy sauce |
2 tablespoons | 30ml | Prepared mustard |
= (preferably stone ground) | ||
1 tablespoon | 15ml | Prepared horseradish |
1/4 teaspoon | 1.3ml | Hot pepper sauce |
3 tablespoons | 45ml | Maple syrup |
1 teaspoon | 5ml | Apple cider vinegar |
2 | Liquid smoke - (to 3) - to taste |
In small bowl, mix seasoning ingredients. Set aside.
In medium skillet, heat oil over medium heat. Add onion and garlic and cook, stirring often, 1 minute. Stir in seasoning mix, chipotle chile, tomato paste and 1 cup water and cook, stirring occasionally, 5 minutes.
Transfer tomato mixture to blender or food processor and process until onion begins to break down, 30 to 60 seconds. Add lime juice, orange juice, tamari, mustard, horseradish, hot pepper sauce, syrup, vinegar and liquid smoke. Process until smooth.
Transfer barbecue sauce to airtight container and store in refrigerator for up to 1 week.
This recipe yields 2 cups.
