Just Peachy Ice Cream Recipe - Cooking Index
1 lb | 454g / 16oz | Soft tofu - drained |
4 | Ripe medium peaches - peeled, chopped | |
1 cup | 198g / 7oz | Sugar |
1/2 cup | 118ml | Plain soy milk |
2 tablespoons | 30ml | Fresh lemon juice |
1 tablespoon | 15ml | Vanilla extract |
1 | Salt |
In food processor, combine all ingredients and process until very smooth.
Pour mixture into ice cream maker and freeze according to manufacturer's directions. Serve right away or transfer to airtight container and freeze up to 3 days.
This recipe yields 5 cups.
