Just Peachy Ice Cream

Recipe Ingredients

1 lb 454g / 16ozSoft tofu - drained
4   Ripe medium peaches - peeled, chopped
1 cup 198g / 7ozSugar
1/2 cup 118mlPlain soy milk
2 tablespoons 30mlFresh lemon juice
1 tablespoon 15mlVanilla extract
1   Salt

Recipe Instructions

In food processor, combine all ingredients and process until very smooth.

Pour mixture into ice cream maker and freeze according to manufacturer's directions. Serve right away or transfer to airtight container and freeze up to 3 days.

This recipe yields 5 cups.
