Lime Cream Recipe - Cooking Index
This cooling cream is a great contrast to spicy soup. It also makes a great all-purpose condiment to enliven beans and grains.
Courses: Sauces, Vegetarian6 oz | 170g | Soft silken tofu |
2 tablespoons | 30ml | Fresh lime juice |
2 tablespoons | 30ml | Vegetable oil |
2 teaspoons | 10ml | Brown rice vinegar |
1 teaspoon | 5ml | Lime peel |
1/4 teaspoon | 1.3ml | Freshly-ground white pepper |
1/2 teaspoon | 2.5ml | Salt |
Combine tofu, lime juice, oil, vinegar, lime peel, pepper and 1/2 teaspoon salt in bowl of food processor. Process until smooth. Transfer to small container, and cover.
Refrigerate at least 15 minutes.
This recipe yields 1 cup.
