Cranberry-Apple Relish Recipe - Cooking Index
1 | Bag fresh cranberries - (12 oz) | |
4 | Sweet cooking apples - peeled, diced | |
= (such as Cortland) | ||
1/2 cup | 80g / 2.8oz | Light brown sugar or Sucanat |
1/4 cup | 59ml | Apple juice |
1/2 teaspoon | 2.5ml | Cinnamon |
1/4 teaspoon | 1.3ml | Ground ginger |
1 | Allspice or nutmeg | |
1/4 cup | 40g / 1.4oz | Golden raisins |
Combine all the ingredients except the raisins in a large saucepan. Stir together; bring to a simmer, then simmer gently, covered until the cranberries have burst and the apples are tender, about 20 to 25 minutes.
Stir in the raisins and allow to cool, uncovered. Transfer to a serving container and serve at room temperature.
This recipe yields 8 or more servings.
