Spinach And Arugula Pesto

1 lb 454g / 16ozFresh spinach - washed, trimmed
1   Fresh arugula - washed, trimmed
3   Garlic cloves - roughly chopped
1/4 teaspoon 1.3mlSalt
1/2 cup 118mlWalnut pieces - toasted
1/2 cup 118mlGrated Pecorino Romano
1/2   Lemon - juiced
2 tablespoons 30mlWater
1/3 cup 78mlExtra-virgin olive oil

Recipe Instructions

In a food processor or blender, combine spinach, arugula, garlic, salt, walnuts, cheese, lemon juice, and water. Process until they form a paste. Gradually blend in olive oil, taste adjust seasoning if necessary.

This recipe yields 2 cups.
