Recipe Ingredients

2 cups 474mlLukewarm water
2 teaspoons 10mlSalt
2 1/4 cups 140g / 4.9ozChickpea flour
1/4 cup 59mlExtra-virgin olive oil - plus
2 tablespoons 30mlExtra-virgin olive oil
  Onion and vegetable marmalade - see * note
  Fresh dried goat cheese

Recipe Instructions

* Note: see the "Onion And Vegetable Marmalade" recipe which is included in this collection.

Preheat oven to 425 degrees and preheat broiler.

Place water and salt in a large wooden bowl. Whisking constantly, add checkpea flour until all is well blended. Stir in olive oil and let stand 30 minutes.

Smear a 14-inch cast-iron skillet with 2 tablespoons oil and pour in batter. Place under broiler for 2 to 4 minutes, until lightly blistering. Remove and place in oven and bake 2 to 4 minutes until firm. Remove, cut into wedges. Serve with Onion And Vegetable Marmalade and fresh dried goat cheese.
