3 cups | 187g / 6.6oz | Diced canned tomatoes |
3/4 cup | 120g / 4.2oz | Diced green beans |
1/2 cup | 73g / 2.6oz | Chopped green bell peppers |
5 | Fresh corn kernels - cut off the cobs | |
1 | Chicken broth | |
1 tablespoon | 15ml | Lemon juice |
2 teaspoons | 10ml | Dried thyme |
1 teaspoon | 5ml | Celery seed |
1 teaspoon | 5ml | Cajun spice blend |
Salt - to taste | ||
Freshly-ground black pepper - to taste | ||

1/4 cup | 4g / 0.1oz | Coarsely-chopped fresh cilantro - for garnish |
In a large stock pot over low heat, saute the garlic in oil for 1 minute. Stir in all the vegetables and cook for 5 minutes. Turn up the heat, add the broth and bring to a boil.
Add lemon juice and seasonings. Reduce heat and simmer gently, covered, for 30 minutes. Serve with chopped cilantro and tortilla chips.
This recipe yields 4 servings.
