Corn-Acopia Soup

Recipe Ingredients

3   Garlic cloves - minced
2 tablespoons 30mlCorn oil
3 cups 187g / 6.6ozDiced canned tomatoes
3/4 cup 120g / 4.2ozDiced green beans
1/2 cup 73g / 2.6ozChopped green bell peppers
5   Fresh corn kernels - cut off the cobs
1   Chicken broth
1 tablespoon 15mlLemon juice
2 teaspoons 10mlDried thyme
1 teaspoon 5mlCelery seed
1 teaspoon 5mlCajun spice blend
  Salt - to taste
  Freshly-ground black pepper - to taste
2   Red pepper sauce
1/4 cup 4g / 0.1ozCoarsely-chopped fresh cilantro - for garnish

Recipe Instructions

In a large stock pot over low heat, saute the garlic in oil for 1 minute. Stir in all the vegetables and cook for 5 minutes. Turn up the heat, add the broth and bring to a boil.

Add lemon juice and seasonings. Reduce heat and simmer gently, covered, for 30 minutes. Serve with chopped cilantro and tortilla chips.

This recipe yields 4 servings.
