Matamoros Beef And Cheese Omelette Sandwich Recipe - Cooking Index
16 oz | 454g | Ground beef |
2 tablespoons | 30ml | Ground cumin |
1 2/3 cups | 104g / 3.7oz | Canned chopped tomatoes |
6 tablespoons | 90ml | Tabasco brand Pepper Sauce |
12 | Eggs - beaten | |
1 cup | 146g / 5.1oz | Grated Monterey Jack cheese |
12 | Biscuits |
Saute the ground beef until it is cooked through. Add the cumin, tomatoes, Tabasco brand Pepper Sauce and cook until the liquid is reduced, about five minutes. Hold warm for service.
For each serving, ladle 2 ounces of the egg into a nonstick omelette pan and cook the egg omelette-style until it is set.
Ladle 1 1/2 ounces of the ground beef mixture down the center of the omelette and top with 1/2 ounce of the cheese. Fold the omelette in half, and then into quarters and place on a biscuit.
This recipe yields 12 servings.
