Louisiana Coconut Chicken Recipe - Cooking Index
1/4 cup | 59ml | Vegetable oil |
2 cups | 125g / 4.4oz | Sliced green onion |
2 cups | 292g / 10oz | Diced red bell pepper |
1 tablespoon | 15ml | Minced fresh garlic |
1 tablespoon | 15ml | Minced fresh ginger |
3 lbs | 1362g / 48oz | Boneless skinless chicken breast - diced |
1 cup | 93g / 3.3oz | Grated unsweetened coconut - fresh or dry |
1/3 cup | 78ml | Tabasco brand Pepper Sauce |
1/2 cup | 118ml | Soy sauce |
1/2 cup | 118ml | Sherry |
In large saute pan, heat vegetable oil. Saute green onions, red pepper, garlic and ginger for 2 to 3 minutes.
Add chicken and cook 8 to 10 minutes.
Add coconut, Tabasco brand Pepper Sauce, soy sauce and sherry and simmer for 15 minutes. Serve over rice and garnish with sliced green onions.
This recipe yields 12 servings.
