Louisiana Coconut Chicken

Recipe Ingredients

1/4 cup 59mlVegetable oil
2 cups 125g / 4.4ozSliced green onion
2 cups 292g / 10ozDiced red bell pepper
1 tablespoon 15mlMinced fresh garlic
1 tablespoon 15mlMinced fresh ginger
3 lbs 1362g / 48ozBoneless skinless chicken breast - diced
1 cup 93g / 3.3ozGrated unsweetened coconut - fresh or dry
1/3 cup 78mlTabasco brand Pepper Sauce
1/2 cup 118mlSoy sauce
1/2 cup 118mlSherry

Recipe Instructions

In large saute pan, heat vegetable oil. Saute green onions, red pepper, garlic and ginger for 2 to 3 minutes.

Add chicken and cook 8 to 10 minutes.

Add coconut, Tabasco brand Pepper Sauce, soy sauce and sherry and simmer for 15 minutes. Serve over rice and garnish with sliced green onions.

This recipe yields 12 servings.
