Greek Feta And Beef Wrap Recipe - Cooking Index
1 cup | 237ml | Black olives - pitted, drained, |

1/4 cup | 59ml | Lemon juice |
1/4 cup | 59ml | Tabasco brand Pepper Sauce |
3/4 cup | 177ml | Yogurt |
3 cups | 187g / 6.6oz | Tomatoes in medium dice |
1/4 cup | 59ml | Olive oil |
12 | Flour torillas - (12" dia) - grilled | |
3 cups | 711ml | Shredded Iceberg lettuce - shredded |
36 oz | 1022g | Grilled beef - thinly sliced |
1 cup | 146g / 5.1oz | Crumbled feta cheese |
To make the wrap sauce, combine the black olives, olive juice, lemon juice and Tabasco brand Pepper Sauce in a blender. Puree. Add yogurt and mix well. Hold refrigerated.
Combine the tomatoes and olive oil. Add salt and pepper to taste. Hold refrigerated.
For each serving, spread 3/4 of one flour tortilla with 2 tablespoons of the wrap sauce. Top with 1 1/2 ounces lettuce, 1 1/2 ounces marinated tomatoes and 3 ounces of the grilled beef. Top with 1/2 ounce of the feta cheese. Roll up tightly, ending with the uncovered portion of the tortilla.
This recipe yields 12 servings.
