Greek Feta And Beef Wrap

Recipe Ingredients

1 cup 237mlBlack olives - pitted, drained,
  With 5 oz juice reserved
1/4 cup 59mlLemon juice
1/4 cup 59mlTabasco brand Pepper Sauce
3/4 cup 177mlYogurt
3 cups 187g / 6.6ozTomatoes in medium dice
1/4 cup 59mlOlive oil
12   Flour torillas - (12" dia) - grilled
3 cups 711mlShredded Iceberg lettuce - shredded
36 oz 1022gGrilled beef - thinly sliced
1 cup 146g / 5.1ozCrumbled feta cheese

Recipe Instructions

To make the wrap sauce, combine the black olives, olive juice, lemon juice and Tabasco brand Pepper Sauce in a blender. Puree. Add yogurt and mix well. Hold refrigerated.

Combine the tomatoes and olive oil. Add salt and pepper to taste. Hold refrigerated.

For each serving, spread 3/4 of one flour tortilla with 2 tablespoons of the wrap sauce. Top with 1 1/2 ounces lettuce, 1 1/2 ounces marinated tomatoes and 3 ounces of the grilled beef. Top with 1/2 ounce of the feta cheese. Roll up tightly, ending with the uncovered portion of the tortilla.

This recipe yields 12 servings.
