Cajeta Sweet Potato Pie Recipe - Cooking Index
2 cups | 474ml | Mashed sweet potatoes |
1/3 cup | 65g / 2.3oz | Sugar |

1 tablespoon | 15ml | Grated orange rind |
1 tablespoon | 15ml | Tabasco brand Pepper Sauce |
1/2 cup | 118ml | Whole milk |
1/4 | Cajeta caramel | |
1 tablespoon | 15ml | Brandy |
2 tablespoons | 30ml | Eggs (large) |
2 cups | 125g / 4.4oz | All-purpose flour |
1/2 teaspoon | 2.5ml | Salt |
1 1/2 | Sweet butter | |
3 tablespoons | 45ml | Margarine |
1/4 cup | 59ml | Ice water |
To make pie shell, blend flour and 1 teaspoons salt. Cut butter and margarine into flour. Add water. Hold together and chill 1 hour. Roll out onto pie plate.
To make sweet potato filling, mix sweet potatoes, sugar, salt, orange rind, Tabasco brand Pepper Sauce, milk, caramel, brandy and eggs. Mix well.
Pour into an unbaked pie shell. Bake at 375 degrees for 50 minutes.
