Black Beans Recipe - Cooking Index
5 lbs | 2270g / 80oz | Dried black beans |
1 lb | 454g / 16oz | Butter or margarine - (2 cups) |
4 | Bay leaves | |
2 tablespoons | 30ml | Salt |
1 tablespoon | 15ml | Tabasco brand Pepper Sauce |
1 tablespoon | 15ml | Dried leaf oregano |
2 teaspoons | 10ml | Curry powder |
1 teaspoon | 5ml | Cumin seed |
Place all ingredients in a large pot. Add water just to cover beans. Bring to boil. Stir, reduce heat. Cover.
Simmer, stirring occasionally for 2 1/2 to 3 hours until beans are tender but whole and liquid is absorbed. More water may be added during cooking process if liquid is absorbed before beans are tender.
Serve with additional Tabasco brand Pepper Sauce, if desired.
